François Pralus sources fine cocoa beans from the finest growing ares. He uses Criollo and Trinitario beans from Indonesia, Venezuela, Columbia, Brasil, Equador, Sao Tome, Ghana, and Tanazinia. He now has his own cocoa plantation in Madagascar. The beans are grown, harvested, and fermented with care and then roasted and transformed into delightful chocolate in his Roanne, France facility.
